  • 2 teaspoons of olive oil
  • ¼ cup of onion, chopped
  • 1 piece of cinnamon stick with 3 inches length
  • ¾ teaspoon of cardamom
  • ¼ teaspoon of salt
  • 1 cup of brown rice or brown basmati
  • 2 ¾ chicken broth (low of sodium) or veggie broth
  • 2 tablespoons of pumpkin
  • 1 cup of corn kernels
