  • 3 pounds russet potatoes
  • 8 ounces sour cream
  • 8 ounces sharp cheddar cheese about 2 1/2 cups
  • 1/2 cup whole
  • 2 teaspoons kosher salt
  • 2 large shallots, minced
  • Freshly ground black pepper
  • 1/4 cup grated Parmesan cheese


  1. Heat the oven to 350°F and add potatoes to a large pot, then add water. Boil it and cook until the potatoes are cooked well. Drain them and put the potatoes to the pot again. Add the sour cream and milk to the pot and smash until you get the desired mixture using potato smasher or electric mixer. Fold in the cheese, shallots, salt and pepper and seasonings. Put the mixture to the baking dish and bake for 30 minutes. Finally, sprinkle with Parmesan cheese and finish under the grill for about 2 minutes.
