  • One lb of sliced asparagus that has been cut into two centimetre pieces with its edges trimmed
  • 1 tablespoon of extra virgin olive oil
  • Crushed three cloves of garlic
  • Uncooked pasta
  • 1 egg yolk
  • Fresh cracked pepper and salt
  • 1 quarter cup of grated Parmigiano cheese.


  1. Boil four cups of water with salt. Add some asparagus and let it cook until three to five minutes tops, or until it got tender. Afterwards, drain the asparagus. Fill the cooking pot with salted water and boil it. Next, follow the package instruction to cook the pasta. Meanwhile, heat the olive oil in a saucepan, cook it with garlic, pepper, and salt, and simmer it until one-two minutes. Toss them with some garlic and olive oil. Combine the cheese, the egg yolk, the remaining quarter cup of asparagus liquid, pepper, and salt. Mix them all well. After you drain your pasta, return it to pot with the mixture of the egg for about two minutes in medium –low temperature. Wait until it thickens and mix in the asparagus.
