Dice your chilis by slicing in half lengthwise, removing the seeds, slicing into thin strips and then dicing.

Throw everything into a bowl, including some chopped coriander (cilantro).  Add juice of half a lime and salt and pepper to taste!

Ingredients

  • 8 ripe tomatoes
  • 1 red capsicum (bell pepper)
  • 2 small cucumbers
  • 1 red onion
  • 2 chili peppers of your choice
  • 1 small bunch coriander
  • 1 clove garlic
  • juice of 1/2 lime
  • salt & pepper to taste.

Instructions

  1. Dice everything really finely.

  2. Stir together in bowl, add lime juice and S&P.

  3. Serve with corn chips, rice cakes, tortillas, beans & rice, burritos, quesadillas, etc!
