Pesto is an herb sauce made with ingredients like fresh basil, cheese, pine nuts, and olive oil. One of my favorite ways to serve this delicious sauce is on top of a bed of steamy, freshly cooked pasta. Classic pesto sauce is simple to make with the help of a blender or food processor.
This recipe yields enough to coat one pound of fresh pasta. I like to make this sauce in my blender and let it stand for about an hour before using.
- 2 cups fresh basil leaves
- 2/3 cup parmesan or romano cheese
- 1/3 cup pine nuts
- 2/3 cup olive oil
- 2 cloves garlic
- sea salt and pepper, to taste
In a blender: Add the ingredients in the following order – olive oil, cheese, garlic, basil, and pine nuts. Secure the lid. Blend on HIGH until the desired consistency is reached. If you’re using a Vitamix blender, selecte Variable 1. Increase the speed to 7 and process for 1 minute. Transfer the pesto to a container and season with sea salt and pepper to taste.
In a food processor: Add the cheese and pine nuts. Blend for a few seconds. Drizzle in the olive oil, and process until the desired consistency is reached. Add garlic followed by basil, processing well after adding each ingredient, process until smooth. Transfer the pesto to an airtight container. Season to taste with salt and pepper.
