Preparation
Ingredientsfor the flavoured mayonnaise 4 heaped tablespoons mayonnaise
2 fresh red chillies, deseeded and
finely chopped zest and juice of 1 lemon zest and
juice of 1 lime sea salt and freshly ground black pepper
sunflower oil
a small piece of potato,
peeled 600g/1lb 6oz squid,
cleaned, scored and
tentacles removed
200g/7oz seasoned flour 2 lemons or limes, for serving

Cooking Steps
First make your flavoured mayonnaise. Put the mayonnaise, chilli and lemon and lime zest into a bowl, mix together and add a good pinch of salt and pepper. Add all the lime juice and half the lemon juice, mix up and taste - you should have a nice creamy, zingy, slightly hot flavour going on. When you feel the citrus flavour is good and prominent, add a couple of extra squeezes of lemon juice so that when you dip your crispy hot squid into the mayonnaise it should balance to perfection.
Get yourself a sturdy, thick-bottomed pot, about 30cm/12 inches in diameter, and fill it with 4cm/11/2 inches of sunflower oil. Put the heat on high and chuck your small piece of potato into the oil. When the potato is golden, floating and frying this is a sign that your oil has reached around 180°C/350°F, the perfect temperature for deep-frying. Make sure you discard the potato. Toss your squid in the flour, shake off any excess and carefully place in your deep-fat fryer. You may have to do this in batches, depending on the size of your fryer. After 2 minutes, when the squid is crispy and golden, remove it using tongs or a slotted spoon and leave to drain on some kitchen paper. Season generously with sea salt, slice up at an angle and serve with your incredible mayo and 1/2 a lemon or lime each.
