Preparation
Ingredients2 large red capsicums
3 tablespoons olive oil
1-2 birds eye chillies 200 g (6 1/2 oz) neufchatel cream cheese
3 tablespoons thick plain yoghurt
1 teaspoon red wine vinegar
1/2 teaspoon soft brown sugar 2spring onions, chopped |

Cooking Steps
Preheat the oven to moderately hot 200°C (400°F/Gas 6). Put the japsicums in a baking dish and drizzle with oil. Bake for 15 minutes. Make a small slit in each of the whole chillies (otherwise they will explode), add to the dish and bake for a further 20 minutes. (If the vegetables begin to burn, add about 1 tablespoon of water to the baking dish.) Allow to cool.
Peel the skin from the cooled capsicums. Cut them and the chillies in half and discard the seeds and membrane. Place the capsicum and chillies in a food processor and mix until pulpy.
Beat the cream cheese until soft, then add the capsicum chilli mixture, yoghurt, vinegar and sugar. Season to taste with salt and pepper, then cover and refrigerate for 30 minutes. Scatter with the spring onions to serve.
