Ingredients

4 (400 g) mackerel, slice finely
1 teaspoon salt
1/2 teaspoon lemon water
2 bay leaf
2 cm galangale, contuse it
5 lemon-grass stem, take the white,contuse it
5 orange leaf, rip it
20 red chillies
1 big red chilli, cut diagonally
10 onions
1 1/2 teaspoon salt
1/4 teaspoon pepper powder
1 teaspoon sugar + 600 ml water
1 onion stem, cut diagonally
1 teaspoon vinegar
5 oil for sauting and frying

Soft Spice
8 pecans.
10 onions
6 garlics
2 cm gingers
3 cm turmeric

How Tos & Summary

Cooking Steps

Smear mackerel with salt and lemon water, wait for 15 minutes. Fry until skinny, separate it
Saute soft spice , bayleaf, galangale, lemon-grass stem , orange leaf,red chilli, big red chilli, and onion until fragrant. Pour water , boil it.
Add salt, pepper powder, and sugar. Cook until thick
Cook fried mackerel until soaked in, add onion leaf and vinegar, stir regularly
