5 (500 g) mackerel, slice it
1/2 teaspoon lemon water
1/2 teaspoon salt
1 bayleaf
1 lemon grass stem,take the white,contuse it
2 orange leaf, discard the venation,rip it
1 tomato,chopped finely
3/4 teaspoon salt
1 teaspoon sugar
50 ml water
1 teaspoon acid water ( from 1/2
   teaspoon java acid and 1 tablespoon water)
2 tablespoon oil for sauting , oil for frying

Rough contused spice
3 fresh big red chillies
4 curly red chillies
4 onions

How Tos & Summary

Cooking Steps

Smear mackerel with lemon water and salt, wait for 15 minutes, fry until skinny,lift it
Saute rough contused spice,bay leaf,lemon grass tem and orange leaf  until fragrant. Add tomato. Stir until withered
 
Put mackerel, salt, and sugar , stir regularly
 
Pour water. Cook until soaked in. Add acid water.Stir regularly
 

Summary

Don't stir too rough too make fish not shatterred

Tips

  • Choose Ripe Tomato with red color flatens in all parts. If held, the tomato still hard enough, not too soft. To peel it,  slice traverses the point and soak in hot boiled water for a moment until get peeled off. Lift and peel tomato's cuticle then thin slice.
