Ingredients1 large head of broccoli, broken into florets
sea salt and freshly ground black pepper olive oil
2 teaspoons cumin seeds
2 teaspoons fennel seeds 5 cardamom pods, seeds removed and pods discarded 250ml/9fl oz natural yoghurt zest and juice of 1 lemon |

Cooking Steps
Blanch the broccoli in boiling, salted water for about 4 minutes until tender, then drain in a colander. Toss in a little olive oil then place on a hot griddle pan or under a hot grill for a couple of minutes to char it slightly.
Meanwhile, toast your spices in a hot pan for 2 minutes then bash them up in a pestle and mortar or Flavour Shaker. Stir most of the spices into the yoghurt, together with the lemon zest and juice and a little salt and pepper. Taste and balance the flavours by adding a little more salt, pepper or lemon juice. Serve the broccoli in a bowl with the spiced yoghurt spooned over the top. Sprinkle with the remaining spice mix.
