Ingredients

425 g (14 Oz) can tomatoes, drained and finely chopped
1 Lebanese cucumber, halved, seeded and finely
chopped
1 small red capsicum, finely chopped
1 small green capsicum, finely chopped
1/2 small onion, grated
2 cloves garlic, finely chopped
1/2 cup (40 g or 1 1/4 oz) fresh breadcrumbs
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon sugar
1/4 teaspoon each of salt and freshly ground black pepper

Cooking Steps

Halve the cucumber,scrape out the seeds with a spoon and chop the flesh
Cut the onion in half and grate against the coarse side of a metal grater
 
Mix together all the ingridients in a large bowl.Cover and refrigerate for 30 minutes to allow the flavours to develop
