Description

This is a good old classic that has been on menus for years. If can, use ripe tomatoes, and to buy olives with their stones in and stone them yourself, you'll end up with a fantastic-tasting salad.

Ingredients

6 ripe plum tomatoes
a handful of black olives
2 avocados, peeled, halved and stoned, then cut into wedgges and tossed in lemon juice
1 large shallot, peeled, and finely diced
1 heaped teaspoon dried oregano
herb or red wine vinegar
extra virgin olive oil
sea salt and freshly ground black pepper
1 cos letuce, outer leaves discarded, inner leaves washed and dried
1 x lemon oil dressing recipe
340 g/12oz feta cheese

Cooking Steps

Cut your tomatoes erratically into roughly 1cm/1/2 inch shapes. Mix them in a bowl with the olives, avocado, shallot, most of the oregano, a few small splashes of the vinegar, a glug of olive oil, salt and pepper and set to one side for 5 minutes.
 

Tear your larger lettuce leaves into pieces and leave the smaller leaves whole, add them to the bowl, then dress everything with some of the lemon oil dressing. Move your dressed salad to a large plate or platter, leaving the wedges of avocado in the bowl. Place these around the outside of the plate
Crumble large chunks of feta over the salad or arrange pieces around the outside of the plate with the avocado. Drizzle the salad once more with extra virgin olive oil and sprinkle with the rest of the oregano.
