Description

Shown here with grilled lobster (lobster mornay). Also good with grilled oysters, steamed or poached fish or vegetables. Mornay sauces often poured over the top of dishes and then grilled or baked.

Ingredients

1 1/3 (350 ml/Ll fl oz) milk slice of onion
1bay leaf
6 peppercorns
30 g (1 oz) butter
1tablespoon plain flour cup
1/2 cup (60 g/2 oz) finely grated Cheddar
1/4 teaspoon mustard powder

How Tos & Summary

Cooking Steps

Put the milk, onion, bay leaf and peppercorns in small pan. Bring to the boil, remove from the heat and leave to infuse for 10 minutes. Strain the milk, discarding the flavourings.

The butter in a small pan and add the flour. Cook, stirring, for 1 minute until the mixture is golden and bubbling. Add the infused milk, a little at a time, stirring between each addition until completely smooth. Continue stirring until the mixture and thickens. Boil for 1 minute more and then remove from the heat.
Add the cheese and mustard and stir until the cheese has melted and the sauce is smooth. Season to taste with salt and pepper

Once the milk has been left to infuse for 10 minutes, strain it.
Add the infused milk very gradually, Stirring to prevent lumps forming
Add the cheese and mustard powder until the cheese has melted
